We’re heading to the RODEO! As a Calgarian by blood, I am CRAZY about rodeo season! My rodeo experiences look a little different these days. No more two stepping with cute cowboys till midnight. No more drinking spicy ceasars and riding mechanical bulls. Β BUT, I wouldn’t change it for the world!
I am all about “cheat days” when it comes to your diet BUT eating everything deep fried on a stick, well just isn’t for me π Go ahead and treat yourself on the weekends but if you are out with the kiddies all day, make sure and pack some healthy eats on the go!
This weekend, try Erin’s delectable “Apple Pie Truffles” in your lunchbox! Don’t let the taste decieve you as these little suckers pack a raw nutritious punch! Β And bonus, your kids will LOVE them too! Healthy and nutritous snacks that taste like a slice of apple pie? Doesn’t get much better than that!

APPLE PIE TRUFFLES
Truffle Ingredients:
1 cup gluten free oats
1 TBSP + 1 tsp cinnamon
1/4 tsp ground clove
1/4 tsp ground nutmeg
1 TBSP Hemp hearts
1 TBSP Ground flax
2 TBSP maple syrup
2 TBSP coconut oil
1 TBSP almond butter
70g dried apples (preferably organic)
40g raisins plus another 40g raisins added seperately
22-25g prunes
105g unsalted raw almonds
Sea salt to taste ( 1/4 tsp)
Sweet cinnamon coating:
1-2 TBSP Cinnamon
2-3 TBSP cane sugar
Pinch of sea salt
Equipment:
*Food processor with blade attachment
*Scale
*Measuring spoons
Blitz Truffle ingredients ALL TOGETHER at once in food processor for approx 2-3 minutes or until mixture comes together and starts to form a ball around blade.
After mixture has come together, add an additional 40g of raisins to mix and pulse for 30 seconds.
Remove blade and using a small scoop or spoon divide mixture into 20-25 g portions and roll into balls with clean hands. Roll these lovely truffles in cinnamon cane sugar mixture or enjoy them Naked… With a loved one π
Truffles store well up to 7-10 days in fridge in airtight container. But I promise they will be devoured by then!

These truffles look amazing! If someone can’t have almonds (or any tree nut), what do you recommend as a substitute for the almond butter and raw almonds? Peanut butter or Sunbutter are the two that come to mind, but I would love your ideas. Thanks!!!
Hi Sarah! that’s a great question, and you honestly couldn’t have answered it better yourself π I would have suggested using an organic peanut butter as well. I haven’t experimented much with Sunbutter but have heard good things. I would just be careful if using in baking as it has a tendency to turn green in some recipes! Something to due with how the baking soda/power reacts with the chlorophyll in the sunflower seeds. So maybe keep that in mind for St Patty’s Day! π Good luck! E
