I believe that rewarding yourself is important.  Completely denying yourself of something will only make you want it more and will likely lead to overindulgence.  I especially love treats that taste completely sinful, yet are surprisingly healthy!  Takes a bit of “sting” out of the guilt. 😉

Try Chef Erin’s “guilt free goodness” Sea Salt Dark Chocolate Avocado Cookies

Sea Salt Dark Chocolate Avocado Cookies *Gluten Free

Ingredients:

  • 1 ripe avocado
  • 1/2 cup quality maple syrup
  • 1 generous TBSP almond butter
  • 1 organic/free range egg OR vegan flax egg
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 60g dark chocolate *I like to use Lindt dark chocolate with sea salt 🙂

Directions:

  1. Preheat oven to 350 F/175 C
  2. In food processor, blend avocado, almond butter and maple syrup until smooth. Add egg.
  3. Mix in cocoa powder, soda and salt and blend until incorporated
  4. Stir in chopped chocolate
  5. Spoon mixture onto parchment lined cookie try, mixture will expand slightly once baked
  6. Bake 9-12 minutes, until cookie comes away from paper and has a little bounce
  7. Allow to cool completely (yes, I know that is difficult to do.) Store in airtight container in fridge or freezer
  8. Flax egg mixture: Simply combine 2 TBSP warm water with 2 TBSP ground flax, let sit for 5 minutes

Ladies: I am so happy to share this recipe with y’all!  These cookies are delectably rich and deceivingly healthy.  They are best served cold.  To make this recipe vegan, simply substitute the egg with the flax mixture in #8.
